LUCINI's olives, a natural product of sustainable agriculture, are grown in small quantities (without chemicals, herbicides or pesticides) under carefully supervised conditions where soil and a cool highland climate are ideal for olive cultivation. LUCINI hand-harvests at precisely the right time to capture the fruit's peak flavor and crushes within 24 hours of harvest in order to preserve freshness. LUCINI will not use machine-harvested olives and will not wait to harvest late when over-ripe olives drop to the ground. LUCINI's ultra-low acidity is naturally achieved (0.2%-0.4%), falling well below the required level of 1% for extra virgin olive oil. We are proud of our ultra-low acidity and put it on our front label.
